The honey is harvested according to the seasons, following the lunar cycles. Harvesting is done RESPONSIBLY; not 100% of the honey is taken from the bees. Only a portion is collected to ensure the hive can survive the winter. This is a very important practice because it not only ensures the survival of the bees but also maintains a balanced ecosystem, allowing plants to continue being pollinated.
